Which glass to choose according to the type of wine?

For the magic to happen, the geometry of the glass must adapt to the wine's personality. Powerful and tannic red wines require a large glass with a tall, wide bowl (Bordeaux style): this generous opening provides an ideal oxygenation surface to soften tannins and release complex aromas of dark fruits or undergrowth. Conversely, delicate and aromatic red wines, such as Pinot Noir, fully blossom in a very bulbous bowl with a tapered rim (Burgundy style) to retain the most volatile aromas.

For white wines, freshness and vivacity are key. A narrower, slightly smaller tulip-shaped glass is therefore preferred, which limits the warming of the wine while channeling its floral and acidic notes directly towards the nose. Finally, the art of sparkling wines has also evolved: to savor a great Champagne, abandon the historic coupe and opt for a slender flute, tapered at the top, or even better, a stemmed glass with angular lines (Open Up by Chef&Sommelier). Its nucleation point will promote a fine and regular stream of bubbles, while its wider bowl in the center will offer the necessary space for the aromatic richness of the cuvée to express itself.

Tulip: wide base and narrow rim, ideal for concentrating the aromas of mature red wines and complex champagnes.
Coupe: flared opening, perfect for festive cuvées and visual presentation.

Choosing your tasting glasses


To enhance every tasting, opt for wine glasses with a wide bowl that tapers gradually towards the rim. This shape concentrates the aromas while allowing optimal oxygenation. The slender stem makes it easy to hold without warming the contents, thus preserving the ideal temperature of your wine. The capacity also plays a decisive role: allow at least 35 cl for reds and smaller volumes for whites.

Water glass to the right of the plate, aligned with the tip of the knife.

How to set glasses on a table?

The art of table setting is not improvised! Just like the arrangement of cutlery, the order of glasses follows strict etiquette rules, essential for setting a chic table or observing official protocol. To avoid making a faux pas at your dinners, glasses are always placed diagonally, from largest to smallest, from left to right.

Here's the perfect arrangement to adopt:

  • The water glass: This is the reference point, generally aligned with the dinner knife. If it's the largest glass in your set, place it all the way to the left. Small exception: if you opt for a stemless glass or one smaller than the others, position it all the way to the right. If you are only serving one type of drink, slightly offset the single glass rather than centering it in front of the plate.
  • Wine glasses: Follow a logic of decreasing size. The red wine glass, traditionally larger, is placed immediately to the right of the water glass. The smaller white wine glass then positions itself further to the right.
  • The champagne flute or coupe: If you are serving bubbles during the meal, do not overload the main line. Place the flute set back, on a second row, ideally tucked between the water glass and the red wine glass.
